An atypical sour mead, in which the Pappins and Antonovkas of the 2023 Paplak apple orchard meet heather, chamomile and wisteria in the realm of spontaneous fermentation with recycled Bauska grapes. Notes of chamomile, apple and propolis combine on the nose, complemented on the tongue by apple and grape fruitiness with Nordic acidity and wild berry tang. A truly interdisciplinary fermented beverage with a pleasantly refreshing aftertaste.
