Spontaneous fermentation full-strength raw mead with chamomile, gooseberries and heather, matured for two years in a white wine barrel. The nose brings out the obscene side of chamomile with the presence of lush wild herbs. On the tongue, the sweetness of the gooseberry and the woodiness of the heather, together with the bee products, temper the notes of jangly slippery lamb and wild berries, which underline the vinous fruitiness. The dry character of the drink makes it all fade quickly into a refreshing aftertaste.
